Hemp farm seeds and hemp groats are great ingredients for various pestos! Some of the olive oil can be replaced with hemp oil. You should use plenty of fresh herbs and, according to your own taste, hemp seeds and seeds. Roasted and salted hemp seeds give a tasty nutty flavor, you don't necessarily need expensive pine nuts for this pesto at all. Garlic should be used sparingly, as it easily overpowers the other flavors.

The best combination of fresh herbs is the traditional fresh basil and leafy parsley. Fresh mint gives great freshness to Hampupesto. Fresh grated organic lemon peel and lemon juice also gives hemp pesto a shelf life. If you want, you can leave out the parmesan or pecorino cheese and instead add the same amount of almond powder or cashew nuts. This is how you can easily get a tasty vegan version of Hemp pesto.
Honey or a pinch of sugar round out the pesto nicely.

As you can see; you should be creative with pesto and spin your own version based on the feeling. A few rules, however:
- don't add too much oil
- a pinch of salt is enough
- you can even leave out the garlic completely.
- clean the fresh herbs carefully
- make only enough of the hemp pesto at a time that it will be eaten away in a week. Store in a clean jar in the refrigerator.

Preparation:
One pound of basil, half a pound of parsley and half a pound of mint. Clean the herbs and remove the branches. 2 cloves of garlic, peeled.
1 dl Hempfarm's peeled and roasted salted seeds. 0.5 dl Hemp grits
1 dl olive oil 0.5 dl Hemp oil
juice and grated rind of half a lemon. 50 g grated Parmesan or Pecorino/vegan you can get this version by replacing the cheese with cashew nuts or almonds
* a few turns of the black pepper mill, a pinch of salt, sugar or honey.

Put all the ingredients in a blender or mix with a hand blender in a tall, narrow container into a smooth paste. Finish to your taste.

Serve Hemp Pesto on fresh bread, as an addition to vegetarian dishes, as a dipping sauce and for example in the fillings of wraps. Also try it with chicken dishes, risotto - or, for example, Easter lamb roast.

Hemp pesto in a beautiful jar is also a nice side dish with bread for dinner parties.
